What is Guar?

Guar is a natural thickener obtained from the endosperm of guar seeds, which grow on guar bushes. The rest of the seeds are high in protein and are typically used as animal feed. It is a seed gum and a galactomannan that is similar to LBG and Tara.

Guar is one of the main thickeners and stabilizers in many applications, including dairy, soups, sauces, beverages, and gluten-free baked goods. Guar helps control ice crystal formation in ice cream, extends the shelf life of baked goods, provides a smooth mouthfeel, improves texture and consistency, and enables cost-effective formulations.
