What is Locust Bean Gum?

Locust Bean Gum (LBG) is a natural polymer, a seed gum, along with Tara and Guar. It is a galactomannan, obtained from the ground endosperm of the seeds of the Carob tree. LBG makes up about 35% of the Carob seeds. LBG has unique rheological properties that are hard to match, making it a preferred choice in several applications including ice cream, fruit preparations, plant-based milk and beverages, and cream cheese. LBG is functionalized at 185F (85C) which provides ease of processing in applications like fruit preparations and cream cheese.

Due to its long linear viscoelastic region, it is an excellent mouthfeel enhancer in beverages. It helps control ice crystals in frozen applications and provides texture, mouthfeel, and spreadability without masking taste or flavor.
