Acacia (aka Gum Acacia)

Acacia is a natural polymer, a tree exudate that has been used for thousands of years. Acacia is obtained from the Acacia tree. It is hand-picked, sun-dried, and sorted before being sold to ingredients suppliers who wash, clean, solubilize and dry it to a powder.

Acacia has two grades: When obtained from Acacia Seyal trees, it’s mainly used as a fiber, encapsulation agent for flavor, color, and active encapsulation, as well as bulking, and binding agent due to its highly branched molecular structure and very low viscosity even at 30% solids.
